One of the biggest turn-ons as a gardener is creating new plants. It's very empowering. It is an amazing feat of nature to see a wee seed develop into a magnificent tree or a shrub or even a tomato plant. Seedlings erupting and pushing the soil away as they unfurl into the light is a miracle of nature. Sowing seeds make gardeners part of that miracle.
For more garden thrills try your hand at plant cloning via cuttings. Slicing of plant parts is an easy way to make new plants from old and they will be exact duplicates of the parent plant. Seeing little roots and new growth appear on a severed stem is certainly reasons to rejoice.
Growing new plants from seeds and cuttings is lots of fun and very empowering, especially when it works. Don't despair if you have more failures than successes. Practice and experiment and learn from your mistakes. Keep at it though. Just think of the money you will save.
